Walnut Pesto Dip

  • 1 cup Shelled Walnuts
  • 1 Medium Fennel (tough core removed and coarsely chopped)
  • 2 t. dry herbs de provence
  • 1 t. sea salt
  • 1 t. coarse pepper
  • 15 basil leaves (or try mint for a change!)
  • 6 anchovy fillet
  • 1/3 cup olive oil


  1. Place all ingredients in food processor.
  2. Serve with breads, crackers or veggies.
  3. Makes a great starter for salad dressing if you have any left after the company leaves!Just add more oil and the juice of a lemon over greens....yum
