Vegan Rocky Road Peppermint Fudge
1/2 cup coconut oil (not melted)
1/2 cup cacao powder
3 tablespoons maple syrup
1/4 teaspoon peppermint extract
1/4 cup chopped walnuts pieces, chopped
1/2 cup Dandies Peppermint Mini Marshmallows
Blend coconut oil, cacao powder, maple syrup, and extract in a food processor. Blend until smooth.
Stir in walnuts and marshmallows.
Spread fudge into a square 8x8 baking pan, lined with parchment paper.
Place in freezer until it’s solid to touch (approximately 3 hours).
Once solid, cut into squares
