Vegan Holiday Cookies

Cinnamon and cranberries are the ultimate holiday ingredient in any baking, making these vegan cookies the perfect snack after your holiday meal.

1 cup dates, packed, soaked for 10 minutes in warm water and drained
1 medium ripe banana
3 Tbsp all natural, salted almond butter
1 tsp cinnamon
1/2 tsp nutmeg
3/4 cup almond meal
3/4 cup rolled oats
1/4 cup dried cranberries
1/4 cup Enjoy Life dark chocolate chips


Add soaked dates, banana, almond butter and spices to a food processor and mix until smooth and combined.
Add the almond meal and rolled oats and pulse until a loose sticky dough is formed.
Transfer the dough into a mixing bowl and add add cranberries and chocolate chips.
Chill the dough for 10 minutes.  While it’s chilling, preheat oven to 350 degrees.
Scoop out 1 Tbsp amounts of your cookie dough and form into balls and press lightly onto a baking sheet lined with parchment paper.  These cookies don’t expand so they can be arranged close together.
Bake for 15-18 minutes.
