Valentine's Day Sugar Cookies

Our very own Food Service Manager, Lisa Cheah's recipe for Valentine's Day cookies!

Ingredients

3          C         ALL PURPOSE FLOUR

¾         TSP     BAKING POWDER

¼         TSP     SEA SALT

1          C         UNSALTED BUTTER

1          C         SUGAR

1          EA       EGG

2          TBSP  MILK

1          TSP     PURE VANILLA EXTRACT

1          TBSP  BEET POWDER


ROYAL ICING

2          EA       EGG WHITE

4          C         ICING SUGAR (SIFTED)

1          TSP     PURE VANILLA EXTRACT

1          TSP     BEET POWDER

Instructions

-SIFT TOGETHER FLOUR, BAKING POWDER, SALT.

-CREAM TOGETHER BUTTER & SUGAR, UNTIL LIGHT IN COLOR.

-ADD MILK, EGG, VANILLA & BEET POWDER TOGETHER AND MIX.

-ADD EGG MIXTURE TO CREAMED BUTTER & SUGAR.

-ADD SIFTED FLOUR MIXTURE TO BUTTER MIXTURE, MIX UNTIL COMBINED TO UNIFORM DOUGH.

-IF DOUGH IS TOO SOFT, REFRIGERATE FOR ONE HOUR.

-ROLL DOUGH OUT ON FLOURED SURFACE TO ¼ INCH THICK.

-CUT OUT COOKIES WITH HEART SHAPED COOKIE CUTTER.

-BAKE IN 325°F OVEN FOR 8-12 MIN.

-DECORATE COOKIES WITH ROYAL ICING ONCE COMPLETELY COOLED.

For Icing:

-ADD BEET POWDER, EGG WHITE & VANILLA IN A BOWL, MIX.

-ADD SIFTED ICING SUGAR, ONE CUP AT A TIME. WHISKING BETWEEN ADDITIONS.

-ONCE INCORPORATED DECORATE COOKIES, EITHER DIPPING, OR PIPING ICING.

-THIS ICING WILL DRY OUT QUICKLY.  YOU CAN PLACE A DAMP TOWEL OVER TOP OF YOUR BOWL TO HELP KEEP IT MOIST.
