Summer Pea Gazpacho

Fresh peas and coconut milk are the base for this quick soup, which is flavoured with peppery ginger and hints of garlic, green onion, and chili flakes!

Ingredients

   1/2 cup vegetable stock

    1 can coconut milk

   2 cups peas (fresh or frozen, defrosted)

   1 tsp freshly grated ginger

   1/2 clove garlic

   1 tsp salt

   1/2 tsp chili flakes

   2 green onions

Instructions

To prepare, blend all ingredients together until smooth. You can warm it up over low heat if you want, but it also makes a mean chilled soup to help you cool down in the summer time.
