Squash Noodles

Butternut squash is one of those often overlooked vegetables but we love it. It’s packed with beta carotene, folate and vitamin C, and since it is naturally sweet it helps satisfy the sweeth tooth.

Ingredients

medium Butternut Squash

1 tbsp olive oil

salt & pepper to taste

Instructions

Preheat oven to 375 degrees.

Slice off the top of the squash and cut off the bottom (bulbous) part of the squash in order to remove the seeds.

Peel the squash with a vegetable peeler and chop it in half make it fit in the Spiralizer.

Spiralize according to directions on your spiralizer

Separate the noodles and put them on a baking tray.

Drizzle the noodles with olive oil and sprinkle with salt and pepper.

 Bake for 10 minutes.

Top with your favorite pasta sauce.
