Spring Salad with Lemon-Sesame Camelina Oil Dressing

Get an extra nutritional boost by using Camelina oil in the dressing for this salad. Camelina oil has antioxidant therapeutic and healing properties due to its high Vitamin E content.

Ingredients

Salad

 1 red bell pepper, chopped

2 teaspoons vegetable oil

1 head romaine lettuce, torn

1/2 bunch fresh spinach, stems removed and chopped

3 roma (plum) tomatoes, chopped

1 cup fresh mushrooms, sliced

1 cup alfalfa sprouts

 

Dressing

1/4 C camelina oil
2 T rice vinegar
juice from 1/4 lemon (a little less than 1 T)
1 t sesame oil
1 t tamari/soy sauce
1/2 t Dijon mustard

Instructions

Combine chopped salad ingredients together in a large bowl. Combine all dressing ingredients in a mason jar, close lid tightly, and shake vigorously. Top the salad with the dressing and serve.
