Spiralized Glory Bowl

Spiralizing is a terrific way to add fun and nutrition into your life. This recipe can be varied to your hearts delight; change up the veggies, use a different type of seed or substitute the rice for quinoa. It is really only limited to your imagingation.

1 tsp vegetable oil

1 cup cubed firm tofu

2 cups cooked brown rice

1 cup spiralized carrots

1 cup spiralized beets

2 cups fresh spinach

½ cup pumpkin seeds


½ cup nutritional yeast

1/3 cup tamari(gf if necessary)

1/3 cup apple cider vinegar

1/3 cup water

2 tbsp tahini

2 cloves garlic crushed

1 ½ cup vegetable oil


Fry tofu until brown and crispy.

Meanwhile cook the rice if you do not already have cooked rice on hand. You could also use quinoa instead of the rice.

Spiralize the carrots and beets; set aside.

Blend together dressing ingredients.

Plate the dish buy putting the spinach in first and then the rice. Drizzle with 1 tbsp of dressing. Layer on the veggies and seeds. Drizzle the remaining dressing on top. Enjoy
