Quinoa Tabouli Salad

1 ½ cups cooked quinoa (1/2 cup uncooked)

3 cups chopped parsley                     

1 medium diced red onion

1 large diced English cucumber        

1 small chopped green pepper

3 cups chopped tomatoes      

1 stalk of celery, diced


¼ cup extra virgin olive oil

½ cup fresh lemon juice                    

½ tsp. salt

1 tsp. dry mint leaves                        

¼ tsp. pepper


Cook quinoa according to packaging. Once cooked, transfer to a bowl and chill for 1 -2 hours

When quinoa is fully chilled, add parsley, cucumber, tomatoes, onion, green pepper and celery

Mix well, breaking up any clumps, dress to taste, and serve
