Quick & Easy No Bake Oatmeal Peanut Butter Bites

These are terrific for a high nutrient super tasty snack for week day lunches. Feel free to mix and match ingredients with equally as tasty results.

1 cup rolled oats

¼ cup ground flax seed

¼ cup sliced almonds, chopped

2 Tbsp chia seeds

1/8 tsp cinnamon

A pinch of salt

¼ cup + 2 tbsp creamy peanut butter, melted and slightly cooled

¼ cup + 1 tbsp honey

¼ tsp vanilla extract

2 tbsp mini chocolate chips


Combine oats, almonds, flaxseeds, chia seeds, salt and cinnamon in a large bowl and stire.

Melt peanut butter and allow to cool slightly, then stir in honey and vanilla until well combined.

Once it has cooled down, pour the peanut butter mixture over the oat mixture and mix well with a spoon and then with your hands.

Fold in chocolate chips and incorporate.

Roll bites into your preferred size and cool in the fridge until firm.
