Popcorn Tofu bites

Crispy on the outside, and soft on the inside, no one will know they're vegan!

350g extra firm organic tofu
⅓ cup chickpea/garbanzo flour
¼ cup nutritional yeast
1 Tbsp spicy mustard
1 tsp pepper
⅓ - ½ cup water

Preheat oven to 400 degrees.
Press tofu by draining tofu, wrap in paper towels or clean tea towel, and place heavy items on top to press.  Press for about 10 minutes.
While the tofu is pressing, combine all dry ingredients in a large bowel.
Once dry ingredients are combined, slowly add the water, whisking as you go until all clumps are removed.
Once it’s smooth, add the mustard and continue to mix.
Break the tofu into big crumbles using your hands and add them to the bowl.  Toss to coat.
Once coated, add tofu to a baking sheet lined with parchment paper.  We recommend using tongs to add tofu one at a time to avoid excess coating.
Bake for 15-20 minutes until golden brown.
Serve warm with Community Naturals Miso Dressing.
