Peach Ginger Hummus
1 can (15 ounces) no salt added canned garbanzo beans, rinsed and drained
3 fresh peaches peeled and chopped or 1 1 – 15oz can peaches
2 to 3 tablespoons extra-virgin olive oil
3 tablespoons water
1 teaspoon grated fresh ginger
1 clove garlic
2 tablespoons fresh lemon juice
½ teaspoon ground cumin
½ teaspoon salt or to taste
⅛ teaspoon cayenne pepper
1 to 2 tablespoons chopped fresh cilantro or mint
Combine the garbanzo beans, half of the peaches, oil, water, ginger, garlic, lemon juice, cumin, salt and cayenne in a blender or food processor. Blend until smooth. Place the mixture in a serving bowl.
Chop the remaining peaches; toss with cilantro or mint. Top the hummus with the peach herb mixture before serving.
Serve with red bell pepper strips, baby carrots, cucumber slices, or pita chips, if desired.
