Paleo Slow Cooker Elk Stew

Slow cookers are the best when you don’t have a lot of time to make a dinner from scratch. Just toss everything in the crockpot, turn it on and forget about it for hours. The beauty is, it should be ready by the time you get home!

Ingredients

2 lbs elk stew meat

3 tbsp wheat-free tamari

1 tsp dried oregano

1 tsp dired thyme

1 tsp chopped garlic

1/4 tsp salt

1/4 tsp pepper

1/4 tsp ginger

1 28 ounce can stewed tomatoes

1 1/2 cups diced bell pepper

1 ½ cups sliced mushrooms

3 carrots, chopped

1/2 cup  red wine or water

Pinch of red pepper flakes

Fresh parsley, for garnish

Instructions

Cut the elk round steak into strips. Mix all ingredients in slow cooker and cook on low for 8-10 hours. Serve with noodles or for extra vegetable, serve over cauliflower mash. Garnish with fresh parsley.
