Old Fashioned Gingerbread Cake

A light and feathery cake that's so easy to make

Ingredients

  • 2 ½ cups s w.w. flour                                     
  • 1 tsp baking soda
  • ½ tsp sea salt                                                             
  • 1 tsp baking powder
  • ½ tsp cloves                                                                
  • 1 tsp cinnamon
  • 1 tbsp fresh ground ginger                                        
  • ½ tsp dry mustard
  • 1 cup light molasses                                                  
  • 1/3 cup oil or applesauce
  • 1 cup warm soymilk or water                                    
  • 1 tbsp vinegar
  • ½ cup raisins                                                              
  • 1 tbsp ground. flax seed

Instructions

  1. Mix together the dry ingredients and then sift them.
  2. Combine the wet ingredients together.
  3. Add wet ingredients to the dry and fold until just mixed.
  4. Pour the batter into a 8 by 8 inch pan which has been oiled and floured and bake in a preheated oven of 350 F.
  5.  Bake for 35 - 45 minutes , until a toothpick comes out clean.
