Maple-Glazed Yams with Dried Cranberries
4 cups peeled, chunked sweet potatoes
2 tbsp organic canola oil
1/8 cup maple syrup
1/8 cup molasses
1 tbsp fresh orange juice
1/2 tsp salt
3 T dried cranberries
Preheat oven to 350F.
Cover yams with salted water in a saucepan and bring to a boil. Cook for 5 minutes and drain. Transfer yams to a baking dish.
Wisk together remaining ingredients, except cranberries, and pour mixture over yams.
Bake for 30 minutes, basting frequently with sauce. Add dried cranberries and cook for another 15 minutes, basting once or twice more. Yams should be quite tender and glazed over.
