Mango Chicken

Quick and fresh for a week night meal

4 Chicken Breasts

1/2 t cumin

1 T. grated fresh ginger

3/4 t. fresh thyme

Pinch each Nutmeg and cayenne pepper

2 t. butter

1 mango peeled and chopped

2 green onions

salt to taste

1/4 cup cilantro chopped

juice of lime plus wedges to serve


In a small dish. stir together spices.

Sprinkle both sides of breasts with spices.

Heat butter in a nonstick skillet of medium high heat. Add breasts and brown 10-15 minutes.

Add mango and onions. Cook, stirring 1 minute.

Sprinkle with salt, cilantro and a squeeze of lime and serve with cooked grains and green salad. Fabulous cold over salad.
