Italian Pasta with Tomato and Kale

Quick, tasty and everyone in the family will love it.

2 tablespoons extra virgin olive oil

2 cloves garlic – crushed

½ small onion chopped

947ml can diced tomatoes


4 large kale leaves - stems removed, roughly chopped

1 pound pasta of your choice (gf if necessary)

¼ tsp each, basil, thyme and oregano


Into a medium sauce pan over medium heat add: oil, garlic, onion and tomatoes. Season with salt/pepper. Stir to combine. Cook for approximately 5 minutes, stirring as necessary.

 Add kale, basil, thyme and oregano. Stir to combine. Continue cooking an additional 15 minutes.

Cool mixture slightly and then add to food processer to blend mixture or use an immersion blender.  Place back into pot once blended

In the meantime place a large pot of generously salted water onto boil. When boiling add pasta and cook until al dente. Drain.

Add cooked pasta to sauce pan with sauce. Toss to combine.

Transfer to serving dish and serve immediately with some grated cheese if you like.
