Hemp Seed Granola Bars
1 1/2 cups gluten-free rolled oats
3/4 cup almonds, coarsely chopped (or other nuts)
1/2 cup dried cranberries (or other dried fruit)
1/2 cup raisins (or other dried fruit)
1 cup coconut flakes
1/2 cup hemp seeds
1/4 cup sunflower seeds (or other seeds)
2 Tbsp. poppy seeds
2 tsp. cinnamon
3 ripe bananas
1/4 cup coconut oil, melted
3 Tbsp. maple syrup
2 Tbsp. chia seeds
6 Tbsp. water
Preheat oven to 350F
In a small bowl, mix the chia seeds and water together. Set aside.
In a medium bowl, mash bananas with a fork in a medium bowl. Add oil, and maple syrup. Once mixed well, add the dry ingredients.
Add chia gel to banana mixture and mix in well. Pour banana mixture over dry ingredients and stir until well combined.
Spread the batter evenly into a 9”x11” baking pan and smooth out the top with a spatula.
Bake for 20-25 minutes, or until edges are golden brown. Let cool completely, cut into square, and store in airtight container and keep in the refrigerator for longer shelf life.
