Greek Chickpea Salad

Bold Greek flavour with plenty of protein from the chickpeas!

Ingredients

 2 cups cooked chickpeas

1/4 cup minced red onion                                         

1 red pepper, minced

2 cloves garlic, minced                                              

1 tbsp lemon juice

2 tbsp balsamic vinegar                                             

1 tsp dried mint leaves

1/2 tsp grated orange rind                                        

1/4 tsp salt

1 tsp oregano                                                             

1/4 cup fresh minced parsley

pinch black pepper                                                    

pinch cayenne

Instructions

Combine all ingredients together in a beautiful bowl.

Stir well and store in the fridge until needed, great with fresh pita.
