Gluten Free Soft Molasses Cookies

Being gluten free does not mean you have to miss out on this holiday classic. So good you will want to make them year round!

2 cups all-purpose gluten-free flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground ginger

1/2 cup brown sugar or coconut sugar

6 tablespoons coconut oil

6 tablespoons molasses

1 egg

1-2 tablespoons orange zest


In a medium mixing bowl, mix together the flour, baking soda, salt, and spices.

In a large mixing bowl, mix together the remaining ingredients.

Add the dry mix to the wet mix and stir just until combined.

You may need to refrigerate the dough for 1-2 hours or until the dough is firm enough to easily roll into balls.

Preheat the oven to 350 °F (175°C) and line a baking sheet with a piece of parchment paper.

Roll the dough into 40  balls (about 1 1/2"), flatten them a little with the palm of your hand, and bake for 6-9 minutes.

Let the cookies cool for 3 minutes on the baking sheet and then remove to a wire rack to cool completely.

Store in an airtight container for up to 5 days
