Gluten Free Coconut Pancakes
1 cup quinoa flour
1 tsp baking powder
1/8 tsp cinnamon
1 tbsp chia seeds
2 tbsp warm water
1 cup unsweetened hemp seed milk
2 tbsp coconut oil, melted
1 tsp vanilla extract
2 tbsp shredded unsweetened coconut, plus more for topping
1 tbsp hemp hearts
In a small container, whisk together the chia seeds and warm water and set aside for 10 minutes.
In a large bowl, mix quinoa flour, baking powder, and cinnamon.
Pour milk, melted coconut oil, and vanilla extract into the dry ingredients and mix.
When chia paste is ready, pour into the pancake mixture and mix well.
Fold coconut shreds and hemp hearts into mixture
Heat a frying pan over medium heat and pour approximately 1/4 cup of batter onto the pan.
Let the pancake cook for two minutes on one side and flip. Cook for another two minutes.
Top with sliced bananas, maple syrup, walnuts and a bit more shredded coconut.
