Gluten Free Christmas Cucumber Canape

A light and refreshing appetizer.

Ingredients

1 can flaked crab meat (or tuna or salmon)

1Tbsp mayo

Salt and Pepper to taste

¼ tsp lemon juice

3 fresh mandarin oranges or one can

1 long English cucumber cut into 24

1 pomegranate

Instructions

Empty the fish into a small bowl and ad mayonnaise salt, pepper and lemon juice. Mix well.

Wash and cut the cucumber into 24 pieces or less depending on how thick you want the slices.

Top the cucumber with the fish mixture, a piece of mandarin orange and a few pomegranate seeds.

Keep chilled until serving.
