Gluten Free Beaver Tails
8 g active dry yeast
1 tsp brown sugar
1 cup warm water
2 tsp vanilla extract
1/4 cup coconut oil
2 cups gluten-free flour
1/2 tsp salt
1/4 cup coconut sugar or sweetener of choice
2 tbsp maple syrup ( we recommend Community Naturals Brand)
2 tbsp cinnamon
In a small bowl, activate yeast by mixing with brown sugar and water. Let sit for 10 minutes. Whisk together with vanilla and oil.
Add remaining ingredients and mix well. You should now have a sticky dough. With wet hands, knead dough on a lightly floured surface until smooth. Allow to rise for 30 minute to 1 hour.
Preheat oven to 250F. Using wet hands, separate dough into 6 and form into ovals no more than 1/4″ thick. Bake for 10 to 15 minutes, until golden.
Remove from oven and let cool for 10 minutes. Add maple syrup and cinnamon to taste. The more traditional topping is white sugar and cinnamon.
