Gluten Free Banana Bread
3 medium ripe bananas
1/2 tsp pure vanilla extract
1 egg (or sub 1 chia/flax egg – 1 Tbsp chia or flax, 2 Tbsp warm water)
3 Tbsp coconut oil, melted
1/4 cup organic cane sugar
1/4 cup packed brown sugar
2-3 Tbsp liquid sweetener (honey, agave nectar, maple syrup, etc.)
3 1/2 tsp baking powder
3/4 tsp sea salt
1/2 tsp ground cinnamon
3/4 cup almond or dairy milk
1 1/4 cup almond meal
1 1/4 cup Bob’s Red Mill gluten free flour blend
1 1/4 cup Only Oats wheat-free rolled oats
Optional Add ins:
Reduce oats to 1 cup and add 1/2 cup of walnuts or chocolate chips
.Preheat oven to 350F and grease a loaf pan.
Mash bananas in a large bowl until clumps are gone.
Add sugars, sweetener, baking powder, salt, cinnamon and milk and whisk vigorously to combine.
Add almond meal, gluten free flour blend and oats to the wet mixture and stir to combine.
Bake for 1 hour and 15 minutes. It should be crackly and golden brown on top when it’s done.
Let cool completely (approximately 30 mins) before slicing.
