Fresh Cilantro and Corn Muffins

Ingredients

  • 2 cups w.w.  pastry flour                                            
  • 1/2 tsp. baking soda                                                   
  • pinch thyme                                                               
  • 1 finely diced red pepper                                          
  • 1 tsp. toasted cumin seeds                                        
  • 2 cups frozen corn, thawed                                       
  • 1 ¼ cups cornmeal
  • 1 ½ tsp baking powder
  • 1 tsp finely minced jalapeno
  • 2tbsp parsley
  • 1tsp paprika
  • 2 tbsp ground flaxseed
  • 1/2 cup olive oil                                                         
  • 2 cups warm water

Instructions

  1. Combine dry ingredients together
  2. Combine wet ingredients together
  3. Add wet to dry folding only enough to moisten.
  4. Adjust liquid if more is needed.
  5. Stir lightly and scoop into prepared muffin tins
  6. Bake at 350 degrees F for 20-25 min. until done.
