Easy Barley Stew

1 large onion diced                                        

2 chopped carrots                                          

1 chopped zucchini                                        

3 chopped potatoes

4 cloves garlic minced

3 stalks celery diced

1 cup chopped cauliflower                                        

1 tsp. salt                                                        

1 tsp. basil                                                      

1 tsp. paprika                                                 

2 tbsp tamari soy sauce                                 

1tsp dill weed

½ tsp black pepper

½ tsp ground cumin seed

1-28oz can stewed tomatoes


In a large pot bring one cup of barley to the boil and simmer gently in plenty of water for one hour.

While the barley is cooking sauté together the onion, carrots, zucchini, potatoes, garlic, celery, cauliflower and tofu.

When the vegetables begin to soften, add cooked barley and spices.

Simmer for 20 minutes longer and serve.
