Cranberry Orange Muffins

Perfect for a holiday season or to make ahead for breakfast during the week.

Dry ingredients:

 2 1/2 cups soft whole-wheat flour                             

Pinch cloves

1 tsp. baking powder                                                 

½ tsp nutmeg

 1/2 tsp. baking soda                                                   

1/2 cup chopped walnuts

 1 tsp. cinnamon                                                          

1 cup rolled oat flakes

 2/3 cup dried cranberries                                            

3 tbsp. ground flaxseed


Wet ingredients:

 2/3 cup liquid honey or preferred sweetener                                                 

1 whole organic orange, skinned and blended

 1/3 cup oil (or part applesauce)                                  

1 1/4 cups water

 1 tsp. vanilla


In a large bowl, mix dry ingredients together. Mix wet ingredients together and stir wet into dry, stir lightly, just enough to combine the two mixtures and moisten all the dry ingredients. Scoop into muffin tins and bake at 350 F for 20 min or so till golden.
