Christmas Cake

Make it traditional this year by making this cake to round out your Christmas dinner. Your guests will be delighted!

2 cups dried apple

2 cups dried pineapple

4 cups raisins

4 cups currants

2 cups dried apricot

2 cups dried cranberry

1.5 cups orange juice

1 cup rum or brandy

1 cup honey or preferred sweetener

1-1/2 cups sunflower oil

1 cup water

2 organic oranges chopped fine

2 organic lemons chopped fine

2 cups brown rice flour

4 cups organic spelt flour

½ cup almonds

2 tbsp non-alum baking powder

2 pinches sea salt

4 tsp each of cinnamon, nutmeg and allspice


Preheat oven to 325F. Finely dice dried fruit. Soak fruit in rum and orange juice overnight. Mix wet ingredients together. Mix dry ingredients together in a separate bowl. Combine wet with dry ingredients and stir in fruit and nuts. Pour mixture into an oiled 8” spring form pan. Bake for 45 minutes, cover with foil and bake for another 45 minutes. The cake is baked when a knife inserted into the cake comes out clean. Cool.
