Chickpea & Tomato Salad

Chickpeas are prized for their high protein and fiber content, and also contain several key vitamins and minerals known two improve health. This light and easy to make salad is perfect for a summer meal or side.

2 cups cooked chickpeas                                

1/4 cup chopped broadleaf parsley

2 tbsp red wine vinegar                                 

2 tsp prepared mustard (gf if necessary)

pinch cayenne                                                

2 tbsp fresh basil or 2 tsp dry

1/2 tsp salt, less if beans canned                   

5 med tomatoes, chopped

1 red or gold pepper, chopped                      

1 small red onion, minced

1 tsp dry mint or 1 tbsp fresh


Mix all ingredients together in a serving bowl.

Chill at least one hour before serving.
