Carrot Ginger Dressing

This dressing has so much flavour, you'll want to put it on everything!

Ingredients

4 large carrots, peeled and chopped
1/4 cup olive oil
1/4 cup flaxseed oil
1/2 cup rice vinegar
4 tbsp sesame oil
3 tbsp water
4 tsp chopped fresh ginger
1 garlic clove, roughly chopped
3 tbsp miso paste
handful of cilantro (optional)

Instructions

Add all ingredients to blender or food processor and blend.  This dressing does come out a bit chunky, you may get a smoother consistency if blended with a Viatmix.

Store in an airtight container for up to 2 weeks.
