Big Sky Minestrone
1 large onion, chopped
6 cloves minced garlic
1 bay leaf
2 thinly sliced leeks
2 large carrots, chopped
3 stalks celery, chopped
3 med potatoes, cubed
1 cup cabbage, chopped
1 large zucchini, cubed
1 can stewed tomatoes, chopped up
Pinch thyme, marjoram, rosemary, dill
1 tsp. oregano
Cayenne pepper and salt to taste
1/2 tsp. basil
You will need to soak and pre-cook 1 cup dry of any combination of navy, kidneys, romanos or chickpea. Set aside.
Boil until tender, rinse and set aside 1 cup spiral pasta
Saute vegetables in oil and when vegetables soften add to cooked beans and add water to make a broth.
For extra tomato flavour add 3 tbsp. tomato paste.
Add cooked pasta, simmer 5 min. more and serve.
