Basic Chicken Soup

There is nothing like a good chicken soup to boost your immune system and improve your chances of beating colds and flus.


1 whole chicken

8 cups water

Coarse salt

4 cups of sliced onion

2 celery stalks, sliced

4 garlic cloves, crushed

6 medium carrots, sliced



Bring chicken, water, and 1 tablespoon salt to a boil in a large pot. Add onions, celery, and garlic. Reduce heat. Simmer for 30 minutes. Add carrots. Simmer, partially covered, for 40 minutes. Remove chicken. Let cool slightly. Remove meat from bones, and cut into bite-size pieces. Stir desired amount of chicken into broth; reserve the rest for another use. Season with salt and pepper.
