Avocado Chicken Salad

This recipe adds the good fat back into chicken salad....no more guilt!

Avocado Dressing

½ large or 1 small ripe avocado

1 garlic, minced

2 tbsp diced red onion

¼ cup cilantro minced

½ tbsp olive oil

1 tbsp plain yogurt

3 tbsp lime juice

¼ tsp onion or garlic powder

½ tsp salt

Black pepper


Chicken Salad

2 cups cooked chicken diced

¼ cup chopped celery

½ an apple chopped

¼ cup seeds or nuts of your choice

¼ cup raisin or grapes halved


Prepare the avocado dressing and the chicken salad in separate bowls.

Add the avocado dressing to the chicken salad mixture and combine well.

Once thoroughly mixed create your sandwich or serve mixture with gluten free crackers instead.
