Arugula, Avocado and Strawberry Salad

Fresh and summery with a peppery bite!

Ingredients

  • 3-4 cups of baby arugula
  • 1 avocado, cubed
  • 1 small red onion, thinly sliced
  • 2 mini cucumbers or a 1/2 english cucumber, sliced
  • a handful of pea shoots or sunflower sprouts
  • a handful of cilantro, chopped
  • salt, pepper
  • 6 ripe strawberries hulled
  • Creamy sesame dressing:
  • 2 tbsp raw tahini
  • 1 tbsp coconut aminos
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1 tbsp roasted sesame oil
  • 1-2 pinch/es dry ginger
  • a splash of mirin cooking wine ( optional 

Instructions

Prepare salad items and place in a bowl.

Whisk together dressing ingredients.

Toss in with salad.
