Apple Spiced Cashews

These taste great as a topping for salad or ice cream.



3 Cups cashews, roasted and unsalted

1/4 cup Community Naturals apple cider

3/4 cup coconut sugar

1 tsp ground cinnamon

1/2 tsp ground all spice



In a large saucepan, over medium-low heat, combine cider, sugar and spices. Stir until all sugar and spices have dissolved completely. Add the nuts and coat thoroughly for 9-10 minutes until there is no liquid in the saucepan. Pour nuts onto a sheet of parchment paper in a single layer to cool.
