Apple Butternut Squash Soup

A super easy, delicious soup that whips up in the Vitamix in 10 minutes!

1 pound peeled butternut squash, cut into chunks

1 medium onion, cut up

1 apple, cut into chunks

1 ½ cups vegetable broth

Salt to taste

Dash of Maison Orphee oil

Dill to taste

½ cup cashews


Optional Candied Walnuts:

1 cup walnuts

¼ cup maple syrup

1 Tbsp butter or Earth Balance


Place all ingredients for soup in the Vitamix. Blend on high for 10 minutes.


Optional Candied Walnuts:

Heat a pan on medium heat and add candied walnuts ingredients. Heat for 5 minutes stirring frequently. Transfer to parchment paper and break the nuts apart so they do not clump together. Let sit for 5 , then top your soup!
