Amazing Vegan Veggie Burger

Besides being so tasty they actually stick together and look good too.

1 large bunch spinach

2 cups lightly mashed steamed potato

½ cup minced onion

3 cloves minced garlic

1 tsp paprika

1 cup bread crumbs

2 tbsp tomato paste

1 tsp salt

1 tbsp molasses

½ cup rolled oats

½ cup fine cornmeal

2 tbsp tamari

1 tsp good mustard

1 tsp basil

1 tsp oregano

water as needed to bind

2 tbsp nutritional yeast flakes


  1. Preheat your oven to 350F.
  2. In a small skillet saute the onions and garlic together over medium heat until soft and translucent, about one minute.
  3. Add the spinach to the pan along with 1 tbsp of water. Cover with a lid and let steam for 3-4 minutes or until the spinach is still green, but has reduced in volume.
  4. Set aside to let cool, between 5 and ten minutes, and then lightly chop up the spinach either with a sharp knife, or by pulsing in a food processor.
  5. In a large bowl combine all of the ingredients and stir together until just combined.
  6. Using a 1/3 cup measure, portion out the mix and shape into patties. Grill on your barbeque until grill marks develop and hot all the way through, or bake in your oven on a lightly greased sheet pan for 15-20 minutes
