Almond Berry Crunch Granola
3 Cups old fashioned rolled oats(gf if necessary)
2/3 Cup sliced raw almonds
1/2 cup unsweetened desiccated coconut flakes
1/3 cup raw pumpkin seeds
1/2 tsp. sea salt
1 tsp. organic cinnamon powder
1/4 cup coconut oil
6 tbsp. raw unpasteurized honey
1 cup sugar free dried organic goji berries
Preheat oven to 325F
In a large bowl stir together oats, almonds, coconut flakes, pumpkin seeds and sea salt.
In a small saucepan melt honey, coconut oil and add cinnamon. Cook over low heat until it becomes liquid stir frequently.
Pour the honey and coconut mix over oat mixture and stir until combined well.
In a large baking pan spread the granola mixture evenly on pan and bake in middle rack stirring halfway through baking. Bake until golden brown for about 15 minutes.
Once golden, remove the pan from the oven and place pan on a cooling rack. Stir granola occasionally until cool then add goji berries.
Store granola in an airtight container and refrigerate to keep freshness; I like to use a juice jug.
Pour granola mixture in a bowl
Add 1/4 cup fresh or frozen black berries (optional)
Add 1 cup of unsweetened almond milk
