5 Ingredient Maple Pecan Fudge
1/2 cup Community Naturals maple syrup
1/3 cup Community Naturals peanut butter (the kind with just salt and peanuts)
1/4 cup Community Naturals coconut oil
2 teaspoons vanilla extract
1/2 cup roasted pecans, coarsely chopped
Line a mini muffin pan with 12 muffin liners or use silicone molds. You can alternatively line a small container with parchment paper or waxed paper.
In a small saucepan, combine the maple syrup, peanut butter and coconut oil over medium heat. Stirring constantly, bring to a boil for roughly 2 minutes. The mixture will eventually come together and reduce slightly. Remove from the heat and stir in the vanilla and the chopped pecans.
Pour into liners, top with additional nuts if you like, and place the pan in the freezer. Freeze for minimum 2-3 hours. The liners will be easy to remove once the fudge has thoroughly frozen. Keep extras in the fridge. This fudge cannot be left out for too long or it will get soft.
