Amaranth Baking Powder Bread
Ingredients
1 cup amaranth flour
1 ½ cups brown rice flour
1 tbsp baking powder (non-aluminum)
1 tsp sea salt
1 cup milk, soy milk or filtered water
3 tbsp honey or sucanat
2 tbsp sunflower seed oil
2 egg whites beaten
Directions
Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients. Pour batter into well-oiled 8 x 4” pan and bake at 350F for 45 minutes. Cool 10 minutes before removing loaf to rack.
